Preparation
  1. For the sauce, purée tahini, water, lemon juice, and dip mix in a blender until smooth.
  2. Using the 4-in-1 Mandoline, slice cucumber into thin ribbons.
  3. Divide cucumber ribbons, mixed greens, quinoa, cabbage and carrots between four bowls. Top each with three falafels. Drizzle with sauce.


Tips

Use a 4-in-1 Mandoline to slice the cucumbers into ribbons, shred the cabbage, and julienne the carrots.
