Finally, a low-calorie, protein-packed Caesar salad that’s delicious and filling!


Ingredients

DRESSING

1 tbsp
1 tbsp
low-fat plain yogurt
14 tsp
Minced GarlicMinced Garlic

extra-virgin olive oil

low-fat milk
2 tbsp
grated Parmesan cheese
Black Pepper, to taste

SALAD

1 tbsp
vegetable oil

cooked chicken breasts, or equivalent tofu, cubed
1 tbsp
Mango Curry Dip Mix, or curry seasoning
6 cups
chopped Romaine lettuce
12 cup
whole-grain croutons

Preparation
  1. Whisk together dressing ingredients and set aside.
  2. Heat oil in frying pan over medium heat. Add chicken and curry. Cook thoroughly and set aside.
  3. In a large mixing bowl, toss lettuce with dressing. Mix in croutons and top with chicken. Serve immediately.
Tips

Serve with a refreshing glass of low-fat milk or dairy free alternative and toasted whole-grain pita bread.
